What is Pepes Tahu?

"Pepes" is an Indonesian cooking method using banana leaf wrappers. The leaf doesn't just hold the food; it infuses the tofu with a delicate, earthy aroma while it steams. The result is a soft, savory tofu "cake" that is packed with aromatics and light on the stomach.

Ingredients

  • 450g Tofu (Firm or medium-firm works best)

  • 1/2 Tomato (diced)

  • 1 Spring onion (sliced)

  • 1 tbsp Fried shallots

  • 10g Yellow Spice Paste (Bumbu Kuning)

  • 1 Egg (to bind everything together)

  • Fresh chilies (optional, if you want a kick!)

  • Salt, pepper, and mushroom powder (to taste)

  • Banana leaves & toothpicks for wrapping

Cooking Instructions

  1. The Mix: In a large bowl, mash the tofu and mix in the diced tomato, spring onion, fried shallots, yellow spice paste, and egg. Season with salt, pepper, and mushroom powder. Stir until everything is well combined.

  2. Prep the Leaves: This technique is crucial! Briefly heat your banana leaves over an open stove flame for about 30 seconds until they become shiny and pliable. This softens the fibers so the leaves don't rip when you fold them.

  3. Wrap: Scoop a portion of the tofu mixture onto a piece of banana leaf. Roll it up tightly and seal both ends using toothpicks.

  4. Steam: Place the pouches in a steamer and cook for 10 minutes. The egg will set, and the flavors will meld into a delicate, soft texture.
